Ingredients

  • 2 1/2 cups almond flour
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/2 cup avocado oil
  • 1/2 cup pure maple syrup
  • 1 tablespoon vanilla extract
  • 1/2 cup dark chocolate chips *I used Enjoy Life

Instructions

  1. Preheat the oven to 350 degrees. Line 2 large baking sheets with parchment paper. 

  2. In a large bowl, combine the almond flour, sea salt, and baking soda. In a medium bowl, whisk together the avocado oil, pure maple syrup, and vanilla extract.

  3. Stir the wet ingredients into the almond flour mixture until thoroughly combined. Fold in chocolate.

  4. Spoon the dough 1 heaping tablespoon at a time onto prepared baking sheets , pressing down with the palm of your hand to flatten, leaving 2 inches between each cookie.

  5. If using stoneware, bake for 10 to 15 minutes or until lightly golden. If using a cookie sheet bake for 7 to 10 minutes, until lightly golden. Let cookies cool on baking sheets, then gently move to a cooling rack. Enjoy!
