As with most of my treats, I kept things really simple with these beauties and the result was simply fabulous. You don’t need a whole lot of ingredients to make good treats, guys! Only eight ingredients are needed for these gems. They couldn’t be any easier to whip up.

If you’re a lemon lover, then you’ve GOT to try these…and if you’re not, you should still try them, because maybe they’ll be the treat to change your mind! Ingredients

  • 1 1/3 cup almond flour
  • 2 tablespoons coconut flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon sea salt
  • 1/4 cup coconut oil *melted
  • 1/3 cup pure maple syrup
  • 1 tablespoon fresh lemon zest
  • 1 1/2 teaspoon lemon extract

Instructions

  1. Preheat oven to 350 degrees. Prepare cookie sheet with parchment paper. Set aside.

  2. In a large bowl combine almond flour, coconut flour, baking soda, and sea salt. In a medium bowl combine melted coconut oil, pure maple syrup, lemon zest, and lemon extract. 

  3. Pour all wet ingredients into the dry ingredients. Mix until fully combined.

  4. Scoop dough onto prepared cookie sheet 1 tablespoon at a time. Flattening each cookie with the palm of your hand. 

  5. Bake for 15-20 minutes or until lightly golden. Cool completely before serving. Makes 15-17 mini drop cookies. Enjoy!
